Coconut Curry Crab (Dungeness). This folks, is one of my all time favorite dishes, and with good reason. Growing up in Trinidad and Tobago, the vast majority of times I ate crabs they were fresh caught. Fresh caught mangrove crabs have enormous flavor. Curry Crabs & Dumplings are a Trinbago classic. Out here in the #upperleftusa Dungeness are abundant at the moment, and I’m fortunate enough to have been invited out to Crab with friends (one of the bonuses of living a tiny country coastal town). It’s an exceptional farm to table experience to be able to harvest fresh seafood and serve it up all in the same day.
